Cookie Ice Cream Sandwiches
INGREDIENTS
- 2 sticks of butter, softened
- 1 cup white sugar
- 1 cup brown sugar
- 2 eggs
- 2 tsp vanilla extract
- 1 tsp baking soda
- 2 tsp hot water
- 1/2 tsp salt
- 3 cups all-purpose flour
- 2 cups chocolate chips
- 1 scoop of ice cream (your choice of flavor)
INSTRUCTIONS
- Preheat oven to 350 Farenheit.
- Using a mixer, beat the butter until smooth.
- Add the sugars, mix until smooth.
- Mix in eggs and vanilla.
- Dissolve baking soda into hot water, add mixture to the bowl.
- Mix salt and flour into batter one cup at a time.
- Stir in the chocolate chips.
- Drop the dough by spoonfuls onto a greased pan.
- Bake for 9-11 minutes.
- Let the cookies cool on a wire rack.
- Put a scoop of ice cream between two cookies and enjoy!
